I looked into the fridge this morning looking for a quality high protein breakfast and inspiration failed me. Eggs had no appeal, cheese even less and as for eating the left over lentils well theres a time and place and today wasnt it. I wanted something sweet. I wavered on the edge of tucking into a slice of toast smothered with peanut butter and syrup but thankfully my better judgement stepped in. As luck would have it my self-discipline paid off and I managed to create the most delicious breakfast in a matter of minutes.

Bananas are known as a super food and not without some justification. Bananas provide nutrients that help our heart maintain the correct rhythm (one banana contains over 450mg of potassium); they look after our eyes and keep our bowels healthy.

To make this breakfast allow three minutes. Chop up your banana and fold in some coconut milk/cream. Sprinkle with walnuts, cashew nuts, hazelnuts and roasted salted almonds. Drizzle with raw honey. Eat immediately. Feel very healthy and self-righteous!

1 large banana (2 small)
2 tblsp coconut milk (The type thats as think as Greek yoghurt)
1 dsp walnuts
1 dsp cashew nuts
1 dsp hazelnuts
1 dsp roast salted almonds
1 dsp raw honey
