I bit the bullet and decided to try the banana pancakes. Given kids can be awkward to feed in the morning, rushing and dithering at the same time it seemed a good idea to make something they could roll up and run with. It was a complete success! So easy to make and so tasty.

To make one portion you simply take two eggs, one preferably nicely ripe banana and whizz up to make a smooth blend. Add a little coconut oil to a frying pan and pour in the right amount of mix to cover the base of the frying to the depth of about 5mm any thinner they break. Cook on a gentle heat and once the top, uncooked side has lost its wet, glossy sheen and turned matt its time to flip it. Cook for another minute or two and serve.

I made a light peanut butter and cinnamon spread to add the extra something and it was delicious. So easy and quick.

Eggs are a very good meal to start the day with. Protein laden and containing omega-3 fatty acids which contributes to heart health and can lower triglycerides, actively helping your body cope with the bad cholesterol. Its also been said that omega-3s can help combat elements of rheumatoid arthritis and depression.

Ingredients

1 ripe banana
2 eggs

Variations add vanilla essence or crushed flax seeds, grated almonds, grated brazil nuts, grated pecan nuts, cinnamon.

Peanut butter spread

1 tbsp organic sugar free peanut butter
1 tbsp crme fraiche or Greek yoghurt
1 tsp raw honey
Pinch of cinnamon
