Kebab is a traditional dish of sliced meat, originating in the Middle East.

There are different variations of the traditional kebab with different shapes and sizes. The below recipe is for vegan kebabs which has red kidney beans as the core ingredient. You may choose to make the kebab in a simple way as similar to a patty or use skewers to make it the traditional way.

We have used breadcrumbs to bind these; you may choose to use corn flour or arrowroot powder also.

Red kidney beans are a little bland on their own, i.e. they do not have a taste of their own until mixed with some spices.

We have added basic spices here; you may choose to add more or any spice mix of your choice. This can be served with any dip, chutney or ketchup.

Ingredients:
1 onion (50 grams)
150 grams cooked kidney beans
Ginger, 1 small piece
cup bread crumbs
1 tbsp. lemon juice
2 tbsp. oil
salt and pepper to taste
onion, tomato for the salad

Perparation:
1. Process beans, onion, lemon juice, ginger, oil, salt in a food processor.
2. Add breadcrumbs to bind the mix.
4. Shape each portion into a small round patty. If using skewers, press the mix evenly around the skewer.
4. Preheat the oven at 175 C (or 350 F) for 10 minutes
5. Oil the baking tray, place the kebabs in a baking tray, and bake at 175 C (or 350 F) for 15 minutes.
6. Brush the kebabs with oil and bake further for 10 minutes until golden brown.
7. Serve it warm with chutney/ketchup and salad

Tips
1. Wooden skewers should be soaked in water for 30 minutes so that they dont burn during cooking time.
