This salad is a good way of incorporating healthy food in your daily diet plan. It is crunchy and chewy owing to pecan nuts and raisins. Kale adds freshness to the salad.

Pecan nuts are high in fiber and omega 3 fatty acids. They are also anti-inflammatory due to the high quantity of magnesium found in them. I chose raisins to give a sweet taste to the salad.

I have used olive oil with salt, pepper and lemon zest to give it a tangy flavor. The zest has an intense lemon/citrus flavor with very little bitterness. You may choose to add lemon juice depending on your taste.

Ingredients:

1 cup kale leaves, stems removed and chopped
cup pecan nuts, halved
cup raisins
1 tablespoon sunflower seeds
zest of lemon or 1 teaspoon lemon juice
1 tablespoon olive oil
salt and pepper to taste

Method:

  1. Heat a pan and dry roast the pecan nuts for 5 minutes
  2. Add raisins and turn off the heat.
  3. Mix all ingredients and toss with the salad dressing
  4. Serve instantly

Optional/Tips

  1. The pecan nuts are dry roasted so that they become extra crunchy, you may choose to avoid that step.
