You can consume it at breakfast, with your favorite vegan milk, in burgers, or salads, like this delicious tabbouleh. Make your favorite Lebanese dish healthier by replacing the traditional bulgur with the super grain of the future quinoa.

Ingredients

Serves 2
1 cup quinoa
2 bunches of fresh parsley, finely chopped
1 small red onion, finely chopped
2 tbsp raw sunflower seeds
juice from one lemon
1 tbsp extra virgin olive oil
tsp pink Himalayan salt
freshly ground black pepper

Method

Boil the quinoa in plenty of water over low heat for 20 minutes, or until it doubles its size. Check the quinoa from time to time to make sure it doesnt get to soft you need fluffy and aerated textured quinoa for a great looking tabbouleh. When ready, drain well and set aside to cool.

In a salad bowl, mix the finely chopped parsley, red onion and sunflower seeds. Add the cooled quinoa, the lemon juice, the olive oil and mix well. Season with salt and pepper and set aside for half an hour before serving, for the flavors to combine.
