Nori is an edible seaweed, used for preparing the sushi rolls, and a great source of rare nutrients, such as Folic Acid and vitamin B12, so precious in the raw vegan diet. The raw vegan Sushi Rolls are very easy to prepare, in less than 15 minutes, making a perfect presentation of a healthy snack.

Ingredients (Serves 2)

  • 1 Small cauliflower
  • 1 Avocado
  • 1 Carrot
  • 50 G Red onion sprouts
  • 2 tbslp freshly squeezed lemon juice
  • 2 Sushi Nori Sheets
  • 2 tblsp Nama Shoyu soy sauce to serve

Method

** Wash the cauliflower in plenty of water and salt, chop it and add in a food processor bowl, with the lemon juice.

** Process until you obtain small pieces, rice-size.

** Peel the avocado, remove the kernel, and cut the flesh into long stripes.

** Drizzle with lemon juice, to prevent oxidizing and changing its color in contact with the air.

** Cut the carrot in long, thin stripes.

** Now assemble the sushi rolls its easier that you might think!

**Take a Nori sheet, and place it on a bamboo pad (it is important to be able to roll).

** Spread the processed cauliflower over the Nori sheet in a layer of 2-3 mm, leaving free a few millimeters of the sheet to one end, to seal the roll.

** Place a line of avocado and carrot stripes at 2-3 cm from the edge, add some red onion sprouts, and start rolling roll a little with one hand the Nori sheet covered with the thin bamboo, pushing slightly with your other hand underneath the vegetable line until the Nori sheet has shaped roll and vegetable line is inside.

** From here continue to roll tight, with both hands, to the end of Nori sheet.

** Moisten the free edge in order to stick, and your Sushi roll is ready! Cut it with a sharp knife into slices 2 cm, and repeat the same with the other Nori sheet.

** Serve it with Nama Shoyu soy sauce.
