Im still on a health kick drive to detox after my holiday and in this recipe I cover all sorts of health bases in one meal. Avocados lower cholesterol and dilate blood vessels while blocking artery-destroying toxicity. They contain a nutrient called glutathione, which is said to block around 30 different carcinogens whilst helping the liver detoxify synthetic chemicals. Almonds are high in fibre, calcium, magnesium, and useable protein which helps stabilize our blood sugar and remove impurities from the bowels. Watercress is also a brilliant detox food as its packed with loads of detoxifying nutrients, including several B vitamins, zinc, potassium, vitamin E and vitamin C. It also has natural diuretic properties, helping flush toxins out the body. To make the dish simply put the watercress on the plate, chop the avocado into the cress, sprinkle with the almonds, add the asparagus spears and soybeans. Finally add the sundried tomato and dust lightly with Himalayan salt and pepper.

Ingredients

1/2 ripe avocado 1 tblsp almonds Small handful fresh soya beans (or defrosted frozen) 3 asparagus spears 2 handfuls watercress 2 pieces of sundried tomato thinly sliced into strips
