A baked vegetable patty makes a delicious weekend lunch served with a green salad or flat bread with a yoghurt, cucumber and garlic dip.

Choice of Ingredients for the patty mix: sweet potatoes, carrots, green onion and mint.

Sweet potatoes are a good source of Vitamin C, Vitamin D, Vitamin B6, Iron and Magnesium.
Carrots are a rich source of Beta-carotene, Vitamin A, minerals and anti-oxidants and known for their anti-aging and vision improvement properties.

Ingredients:
1 medium sweet potato (50 gms)
2 medium carrots (100 gms)
2 sprigs of mint
2 stems of green onion
2 tbsp corn flour
2 tsp olive oil
Salt and Pepper to taste

Method:
1. Boil sweet potatoes and carrots for 15 minutes until soft and when cool enough to handle, grate them.
2. Mix all ingredients with 1 tbsp oil in a mixing bowl.
3. Make 4-5 equal portions of the patty mix.
4. Give each portion a round shape and press it gently to make a flat patty.
4. Preheat the oven at 175 C (or 350 F) for 10 minutes
5. Oil the baking tray, place the patties in a baking tray, and bake at 175 C (or 350 F) for 10 minutes.
6. Brush the patties with olive oil and bake further for 10 minutes until golden brown.
7. Take out the patties from the tray, if it sticks to the baking tray then let it cool down a little and use a spatula to take out the patty.

Tips
Cook the vegetables the night before so they cool and ready to grate.
