With a delicious flavor and a rich consistency, coconut is controversial when it comes to its effect on our health. This is mainly because its high saturated fat about 60 percent of total fats. Animal saturated fats have a completely different biochemical structure than the vegetal sources such as coconut. Animal saturated fats have a negative impact on cholesterol levels, the coconut fats do not. The Pacific Islands and Asian populations, with a diet rich in unrefined coconut products, have a very low risk of heart diseases. The golden rule always choose unrefined coconut products!

Ingredients

1 cup unrefined desiccated coconut
1 tbsp organic raw honey
1 1/2 tbsp coconut oil
1/2 vegan chocolate chips or 1 vegan chocolate

Method

Add the desiccated coconut in a food processor, with the raw honey and one tablespoon of coconut oil.Pulse 3-4 times to combine.Shape small balls from the mixture, using your palms, and line them on a baking sheet.Melt the chocolate with 1/2 tablespoon coconut oil, let it cool until just warm, then cover the coconut balls with it. Sit the chocolate dipped balls on a sheet of plastic food wrap stretched across a plate. This makes a nice non-stick surface for them to set.Cover with plastic foil, and place them in the refrigerator for at least one hour, to thicken.
