Almond flour is gluten free and made from crushed, blanched almonds (without skin). Almond meal is crushed whole almonds which can contain almonds with or without skins. Either is acceptable for this recipe and the texture is divine. For added indulgence include choc chips, walnuts or shredded coconut.


3 (ripe) bananas mashed
3 eggs
1 tablespoon honey
2 teaspoons vanilla extract
cup coconut oil
2 cups almond flour
teaspoon sea salt
1 teaspoon baking soda
1 teaspoon cinnamon

Method To Prepare

Pre heat oven to 350 F (180 C)

Mash the bananas, and add them to a medium sized bowl with the coconut oil. Beat till combined with a hand beater or the mixture can be pulsed in a food processor.

Add the almond flour, salt, baking soda and cinnamon and beat (or pulse) till combined. The mixture will be fairly loose.

Spoon the mixture into a 12 cup muffin tin and bake for about 20 mins or until golden on top, at 350 F (180 C)
