Kale is a super food excellent for detox and keeps cholesterol levels under control. This combined with the goodness of beans and carrots makes it a wholesome soup. Beans are a great source of protein and are also known for their cardiovascular benefits. They are good for the brain and maintain blood sugar. Carrots are known for their anti-aging benefits and healthy glowing skin.

Ingredients:

cup boiled beans (black eyed/kidney beans)
2 celery stalks, chopped
4 small carrots, sliced
cup chopped kale leaves
1 tsp lemon juice
3 cups of water
salt and pepper to taste

Method:

  1. Add all the vegetables and beans except kale in a pot with boiling water.
  2. Boil for 5 minutes until veggies are soft.
  3. Add salt, pepper and lemon juice and let is simmer for 2 minutes
  4. Serve hot, garnished with chopped kale leaves.

Optional/Tips

  1. You may stir fry onion and garlic and add to the soup to give a nice flavor.
