This is a dish that you will get at a fancy restaurant. It looks difficult and a chef special but it is very easy to make. I am sure you must have tried tomatoes stuffed with vegetables or meat. This is the healthier version with a tasty filling of quinoa. You can sprinkle some cheese at the top, to give it that extra zing. You can have this for a healthy and filling dinner.
Quinoa is gluten free and a great source of Riboflavin. It has the goodness of 9 essential amino acids and high protein. Tomatoes are known for their anti-oxidant properties and are a great source Vitamin A C and Folic acid.
Ingredients:
stuffing
  cup cooked quinoa,
 1 onion, sliced
 1 small piece of ginger, crushed
 1 tablespoon oil
 salt and pepper to taste
baked tomatoes
 3-4 tomatoes
 1 tablespoon oil
 1 small piece of mozzarella cheese for garnishing
Method:
Stuffing
- Heat oil in a pan.
 - Add ginger, onion and saut for 5 minutes.
 - Add quinoa and saut for 2 minutes.
 - Add salt and pepper.
 - Turn off the heat
 
Stuffing
- Slice off the tomatoes from top.
 - Scoop out the pulp of the tomatoes with a spoon.
 - Brush the tomatoes with olive oil and bake them inverted on a baking tray for 5 minutes. This will help them dry from within
 - Fill the tomato shells with quinoa stuffing
 - Bake the stuffed tomatoes for 10 minutes.
 - Sprinkle cheese on top and bake further for 2-3 minutes until the cheese melts
 - Serve warm
 
Tips:
- Use the tomato tops to support the tomatoes in the baking dish.
