100 g raw cashew nuts, soaked overnight
3 tbsp vegan milk of choice
100 g raw buckwheat groats, soaked overnight
200 g fresh strawberries
1 ripe banana
1 tbsp raw cocoa powder
2 tsp raw agave nectar
2 tbsp organic coconut milk
A pinch of pink Himalayan salt


Nutritious and energizing, buckwheat is not a grain, as most people think, but an edible seed, which makes it a great substitute in the gluten-free diets. Buckwheat provides excellent benefits for health, lowering the risk of diabetes, balancing the glycaemic levels and helping the prevention of gallstones. Moreover, it contains phytonutrients that extend the action of Vitamin C (found in strawberries); so pairing them in this raw parfait is not just incredibly delicious but also very healthy.


Wash the strawberries with plenty of water, drain well, cut them in cubes, and set aside.
Place the soaked cashews and agave nectar in the food processor, and blend well to obtain a creamy mixture. Add gradually the coconut milk, to gain even more creaminess and a beautiful flavor. Move the mixture to a bowl, and set aside.
Now its the soaked buckwheat turn to be processed, so blend it with the vegan milk, banana and raw cacao powder. If the consistence is too thick, add more vegan milk to dilute. Process until you obtain a creamy flavored texture, then add a pinch of salt to enhance the cacao flavor and its ready.
For assembling the parfaits, use a small spoon to create layers of buckwheat cream, cashew and coconut cream topped with fresh strawberries. Refrigerate at least 30 minutes before consuming.
