This raw cheesecake with berries is absolutely delicious and its super easy to make. All you will need is a food processor and some measuring cups and spoons. The two different layers (chewy chocolate base and creamy cashew cream cheese filling) create the ultimate blend of flavors and textures. Its made with healthy ingredients and each bite is loaded with vitamins and nutrients which will fill you with incredible energy. This cake is easy to digest and theres none of that nasty bloating feeling after. It freezes well and its perfect for entertaining!

For crust:
2 cups raw walnuts
2 tbsp raw cocoa
10 Medjool dates, pitted

For filling:
3 cups cashews, (soaked in water for at least 4 hours or overnight and then drained)
cup lemon juice
cup coconut nectar
cup coconut oil, melted
1 teaspoon lemon zest

For decoration:
2 cups mix fresh or frozen berries
1 tbsp mint leaves


=> Place the walnuts, dates and cocoa in a food processor.

=> Pulse until a sticky mix forms.

=> Line 8 inch spring form cake tin with greaseproof paper and then press the mixture into the base of cake tin.

=> Place in the freezer for 30 minutes.

=> To make a filling, place the soaked cashews, lemon juice and zest, coconut nectar and oil in a food processor and pulse until creamy filling forms.

=> Pour the filling over the base and return the cake in a freezer for 3 hours. Before serving, take the cake out or the freezer for 10 minutes to soften.

=> Top with fresh or frozen berries and mint leaves to serve.
