Ingredients

Makes 7-10 bars

1 cup old-fashioned rolled oats
4 tbsp vegan milk of choice
1/2 cup dried dates
1/4 cup chia seeds
1/4 cup hemp seeds
1/4 cup raw sunflower seeds
1/4 cup raw pumpkin seeds
1/4 cup raw almonds
1/4 cups sultanas or raisins
1/2 tsp cinnamon
A pinch of pink Himalayan salt

Method

Preheat oven to 175C/350F. Add the rolled oats in the food processor and pulse until you obtain a flour. Transfer the flour in a large bowl. Remove the stones from dates, chop roughly and add them in the food processor, together with the vegan milk. Blend until you obtain a smooth mixture add more milk if necessary. Pour the dates mixture over the oat flour, add the raw seeds, the sultanas, the cinnamon and salt, and stir very well until all ingredients incorporate and you obtain a thick granola batter.

Line a baking sheet with baking paper, and scoop the granola mixture on top. Use a spatula to evenly spread the mixture. Bake for 15-20 minutes until golden-brown, checking it frequently as oats burn very fast. Transfer to a cooling rack, let cool for 5 minutes, then slice and serve right away, or keep in an airtight container for about 7 days.
