No salad says summer better than this one with fresh tomatoes and corn. Its like summer in a bowl. Juicy tomatoes, crunchy, sweet corn, and fragrant basil pair perfectly. This salad is best when fresh sweet corn is in season, but frozen kernels are an accessible substitute too. Its super simple, incredibly fast to make, light, refreshing and it looks so pretty! This refreshing combination works as a salad, as a topping for whole grains or as a salsa. And lets not forget about the health benefits of corn and tomato. Sweet corn contains dietary fiber, and vitamins B and C. Both tomatoes and corn are also packed with an abundance of carotenoids that have been shown to lower the risk of cancer.
