This salad is best when fresh sweet corn is in season, but frozen kernels are an accessible substitute too. Its super simple, incredibly fast to make, light, refreshing and it looks so pretty! This refreshing combination works as a salad, as a topping for whole grains or as a salsa. And lets not forget about the health benefits of corn and tomato. 2 cups cherry tomatoes, sliced
2 cups corn kernels, fresh or thawed
cup fresh basil, chopped
1 lime, juiced
3 tbsp olive oil
tsp salt


In a small bowl combine the olive oil, lime juice, basil and salt. Set aside. In a large bowl, combine the corn and tomatoes. Drizzle with dressing and gently toss to coat. Refrigerate until serving.
