This is a vegan healthy dish which can be prepared in advance and served straight out of the fridge. It is a recipe that is similarto oatmeal with milk, but this recipe scores with its vegan delight along with the goodness of quinoa. Almond milk is prepared when almonds are soaked in water for 1 hour, blended with water and passed through a sieve. This process is repeated 2-3 times until the milk is extracted from almonds. You may use soymilk or any other vegan milk of your choice.

Ingredients

1 cup cooked quinoa
1 cup almond milk
1 tbsp. almonds, chopped
1 tbsp. agave honey/maple syrup

Method

  1. Heat almond milk in a pan for 2-3 minutes on medium heat.
  2. Add cooked quinoa and let it simmer for 3-4 minutes.
  3. Take it off from the heat.
  4. Garnish with honey/maple syrup and chopped almonds
  5. Serve warm/chilled

Tips (to make almond milk)

  1. Soak cup almonds in water for 1 hour
  2. Blend with 1 cup of water
  3. Pass it through a sieve or fine cloth to extract the milk
  4. Add 1/2 cups of water to the almond mix
  5. Blend again and pass it through a sieve
