This is one of those smoothies that is so delicious that it takes you aback. The ingredients all sound quite ordinary but mixed together are refreshing, filling, satisfying and oh so tasty.

We invented this after a holiday break which saw altogether too much partying and not enough sleep. This was the perfect lunchtime pick me up.

Mint is great for soothing the stomach and can help fight nausea and ease headaches. It also freshens the breath and cleanses the mouth. Perfect for the Monday after the weekend before. Spinach is also brilliant at conditioning the skin.

The pinch of magnesium (Epsom salts) is really beneficial if youve been enjoying too much sugar. Amongst a thousand other benefits magnesium helps you sleep.

The base for the smoothies is freshly juiced apple, blended with all the fresh ingredients.

** Drink cool but not frozen.

Ingredients (Serves 1)

=> 250 ml of freshly squeezed apple juice
=> peeled and seeded cucumber
=> 1 cup of baby spinach leaves
=> Juice of half a lime
=> Pinch of magnesium
=> Handful of fresh mint
