Quinoa Burgers

 

The most interesting part about this salad is the texture. There are so many different ingredients in this salad with different textures that you enjoy every bite of it. This salad is ready instantly and should be served at the same time; otherwise you will lose the texture.

Kale is low in calories, high in fiber and has zero fat. Goji berries are rich in proteins and vitamin C. They can be consumed as a snack or added to soups and salads. 

Ingredients:

1 cup kale leaves, stems removed and chopped
1 apple, sliced
1 tbsp. sunflower seeds
2 tbsp. goji berries
1 tsp. apple cider vinegar / lemon juice
salt and pepper to taste

Method:

  1. Toss the kale and apple slices with apple cider, salt and pepper.
  2. Add the goji berries and sunflower seeds before serving. 

Optional/Tips

  1. You can add raisins instead of goji berries.
