Ingredients

1 cup quinoa
1/2 cup firm tofu
2 tbsp flax seeds, soaked overnight
1 tbsp chia seeds, soaked overnight
1 medium onion
2 garlic cloves
1 tbsp olive oil
1 bunch of fresh parsley
1 tsp Pink Himalayan salt
freshly ground black pepper

These vegan burgers are packed with good quality proteins, calcium and fiber, creating a perfect balanced snack or even a meal. Serve them in a wholemeal bun, with avocado slices and vegan yogurt dip, and you have the healthiest and incredibly delicious version of any burger youve ever eaten!

Method

Boil the quinoa in plenty of water for 20 minutes, or until it doubles its volume. Drain and let cool. Preheat the oven at 175C/347F. In a bowl, bring together the quinoa, the finely chopped onion, the crushed garlic cloves, the flax and chia seeds, olive oil the chopped parsley and crumbled tofu, and mix well.

Season with salt and pepper. Make small balls from the mixture, press them with your palms to create the burger shape, and line them on a baking sheet. Bake for 20 minutes, turn the burgers on the other side, and bake again for 20 minutes, until golden and crispy. Serve them hot in a bun, or cold, as a snack. Store in the refrigerator.
