This is a dish that you will get at a fancy restaurant. It looks difficult and a chef special but it is very easy to make. I am sure you must have tried tomatoes stuffed with vegetables or meat. This is the healthier version with a tasty filling of quinoa. You can sprinkle some cheese at the top, to give it that extra zing. You can have this for a healthy and filling dinner.

Quinoa is gluten free and a great source of Riboflavin. It has the goodness of 9 essential amino acids and high protein. Tomatoes are known for their anti-oxidant properties and are a great source Vitamin A C and Folic acid.

Ingredients:

stuffing
cup cooked quinoa,
1 onion, sliced
1 small piece of ginger, crushed
1 tablespoon oil
salt and pepper to taste

baked tomatoes
3-4 tomatoes
1 tablespoon oil
1 small piece of mozzarella cheese for garnishing

Method:

Stuffing

  1. Heat oil in a pan.
  2. Add ginger, onion and saut for 5 minutes.
  3. Add quinoa and saut for 2 minutes.
  4. Add salt and pepper.
  5. Turn off the heat

Stuffing

  1. Slice off the tomatoes from top.
  2. Scoop out the pulp of the tomatoes with a spoon.
  3. Brush the tomatoes with olive oil and bake them inverted on a baking tray for 5 minutes. This will help them dry from within
  4. Fill the tomato shells with quinoa stuffing
  5. Bake the stuffed tomatoes for 10 minutes.
  6. Sprinkle cheese on top and bake further for 2-3 minutes until the cheese melts
  7. Serve warm

Tips:

  1. Use the tomato tops to support the tomatoes in the baking dish.
