We all know that breakfast is the most important meal of the day. We should also all know that protein is the best food for breakfast. It boosts our blood sugar without the subsequent crash and helps mute the hunger hormone ghrelin which means you feel fuller for longer. But only if you eat enough protein! One egg is not going to do the job.

Here we have two large black mushrooms fried in butter, a whole tomato halved and fried with the mushrooms. And for the protein we have some homemade nut bread toast topped with two poached free-range eggs.

Nut bread Ingredients

Makes one loaf

2 cups whole wheat bread flour
1 tablespoon nutritional yeast
1 cup brown sugar
1 tablespoon baking powder
teaspoon salt
1 beaten egg
1 cup milk
cup sunflower oil
cup chopped almonds
cup chopped pecans
cup chopped cashew nuts

Combine flour, sugar, salt and baking powder and make a well in the centre. In a different container combine egg, milk and oil and pour into the well of the dry ingredients. Stir but dont blend and then gradually fold in the nuts being careful not to over mix.

Put into a greased loaf tin and bake at 180 degrees Celsius for about fifty minutes or until a knife slips out clean.
