In Mayan and Aztec cultures, Chia means strength, and this small seed really deserves its name. Ingredients

4 tbsp chia seeds
1/2 cup raw cashews
1/2 cup vegan milk of choice
1 tbsp good quality raw honey
8 fresh strawberries

Method

Soak overnight chia seeds in vegan milk and the cashews in water. Place the cashews with vegan milk in a food processor, add the raw honey and pulse until you obtain a creamy mixture. Scoop the cream and place in a bowl, together with the soaked chia seeds, and mix well to incorporate the seeds.

Wash the strawberries with plenty of water, cut them in halves, and set aside to drain. Assemble the pudding in serving glasses evenly distribute the cashew-chia pudding with a spoon, then garnish with fresh strawberries. Drizzle a little bit of honey over the strawberries. Serve immediately.
