Unpopular and not-so-good-looking, buckwheat is a secret treasure of nutrients. The little brown seeds come with nutty taste and healing superpowers, as they are linked to lowered the risk of high cholesterol, high blood pressure and diabetes. Buckwheat can also prevent gallstones and breast cancer, so make sure you include it as often as possible in your diet!

Raw Buckwheat Pudding with Fruits

Ingredients
1 cup soaked raw buckwheat seeds
1 cup unsweetened coconut milk
1 ripe banana
1 tblsp agave nectar
1 handful Goji berries and cranberries
organic mango fruit
organic red apple
1 tsp flax seeds

Method
* Soak the seeds over night in filtered water. Bring together in a food processor the soaked buckwheat, the coconut milk, the chopped banana and the agave nectar.

* Blend until smooth and creamy, and let it rest in the refrigerator.

* Cut the mango and apple into small cubes.

* Fill the serving glasses with the pudding, and sprinkle generously with Goji berries, cranberries, mango and apple cubes.

* Drizzle some agave nectar and sprinkle some flax seeds, to give personality to your buckwheat pudding.
